Ristretto
An ristretto is even shorter drink than an espresso, usually only 15-20ml long, giving it a sweet, fruity, syrup like flavour and texture. To make it follow the steps for espresso but stop the flow of water earlier at about 15-20ml.

Being shorter than espresso you don’t get the more bitter compounds that get extracted into a espresso near the end. This means that a ristretto is more citrusy, sweet and syrupy.
