Coffee water shouldn’t reach boiling point

The perfect coffee should be heated to only around 80-90 degrees, claim experts.
A number of coffee bean producers have argued that using boiling water with a coffee extracts all the salts and dissolved alkalinity which make coffee taste so good.
It is thought that those who turn off their kettle or coffee machine at the first sign of water bubbling will remove the correct proportion of these ingredients in order to enrich the taste of their beverage.
Gerson Aranha, who is CEO of coffee bean supplier Nilgiri Foods and Beverages, is one of many coffee experts to have spoken out about this method in recent times.
Speaking for a investigation by dnaindia.com, he said: “You should be able to finish your cappuccino in 2-3 sips if required. That’s how hot your coffee should be.
The investigation was undertaken by indian journalist R Krishna, who also took the time to study experts opinions of how to make the perfect coffee bean. He concluded that the temperature at which coffee was roasted was particularly crucial to its quality.
Commenting on the subject, K Basavaraj from the Coffee Board of India told indiatimes.com: “At roughly 217 degrees, all chemical structure is lost, and a series of compounds start developing.”
